Rakkasan Chef is the private practice of Shawn Fralin — twenty years in residence service, a Ritz-Carlton Residences alumnus, a 101st Airborne veteran. Every menu is composed for the table at hand: the room, the season, the hour, the people. A standing dinner for forty. A long pasta night for twelve. A single inaugural evening for twenty. Each one written once.

Before the chef's whites, Shawn Fralin wore the patch of the Rakkasan — the 187th Infantry Regiment of the 101st Airborne. Preparation, precision, the quiet authority of a team under pressure. He brings the same discipline to the table.
Twenty years in private service — most recently as Executive Chef and F&B Director at The Ritz-Carlton Residences. A presenter and on-air voice featured on Food Network, MTV, TLC, and Fine Living TV.

Private Residences
In-home dinners, multi-day chef residencies, and standing engagements. The chef arrives the day of, cooks for the room, and breaks down before midnight.
Yacht Charters
Galley dining for charter clients along the Florida coast, the Caribbean, and the Mediterranean. Menus composed dock-side from the morning's market.
Travel Chef
For clients who fly the chef to their location — a week in New York, a month in Aspen, a long weekend in Lake Como. Composed and executed end-to-end.
